How do I change the name associated with an email address. I changed it in Contacts, but when I start typing the email address in the TO: line, the old name comes up. Help!

I sent a person an email and the system asked if I wanted to save it, which I did.  There was a type-o.

I went to contacts and fixed it, but every time I attempt to type in this person's name or address the old, wrong name comes up.

Any thoughts?
