Apostrophes to number 1, ‘E’ inside parenthesis, other type translations

I'm sending emails in HMTL via Outlook 2011. When getting a reply in Text, my apostrophes are converted to the number "1". My parentheses marks also at times are converted to 1. And, there's a capital 'E' dropped right after an open parenthesis mark and before the first letter inside the parens, reading (E. 

Help! People are seeing this as my emails come into them, even on Mac in addition to Windows. So, doesn't seem to be an issue as they reply, but as it comes into them.


Some recipients see weird characters instead of apostrophes and quotes

When I include some characters such as apostrophes and quotes in my emails, some of my recipients get weird characters instead of the apostrophes and quotes that I have typed in and see in the message I have sent.  How do I correct this?  I have tried various mail encoding options and none resolves this problem.  Please help or tell me how to change back from Live Mail to Windows Mail.  By the way, I am using Windows 7.
